Fall Recipe! 


  • 2 1/2 cups 3/4-inch diced butternut squash

  • 2 1/2 cups 3/4-inch diced yukon gold potatoes

  • 2 Bay leaves

  • 2 Carrots, medium

  • 3 cloves Garlic

  • 2 cups Kale, packed

  • 1 (14.5 oz) can Kidney beans, red or white

  • 2 1/2 tsp Rosemary or oregano, fresh

  • 2 1/2 tsp Thyme, fresh

  • 1 (14.5 oz) can Tomatoes

  • 1 Yellow onion, medium

  • 1 Zucchini, medium

Canned Goods

  • 6 cups Vegetable broth

Pasta & Grains

  • 2/3 cup Ditalini pasta, dry

Baking & Spices

  • 1 Salt and freshly ground black pepper

Oils & Vinegars

  • 1 tbsp Olive oil


  • 1 Parmesan cheese

Autumn Minestrone 

  1. Warm the oil in a large soup pot on medium heat.

  2. Add the onions and garlic, and saute for 5 minutes.

  3. Add the squash, celery, carrots, potatoes, oregano, salt, pepper, and water and vegetable stock and cook for 10

  4. minutes or until the potatoes are almost done.

  5. Add the kale and beans and simmer for another 5 to 7 minutes, until the kale is tender and the beans are hot.

  6. Serve immediately.
